Roasting bell peppers brings out a natural sweet and smoky flavor. Enjoy them topped onto bread or sandwiches, or pureed into sauces and soups to add additional flavor and texture.
- Bell Peppers
- Prepare the oven broiler.
- Make a slit in each pepper and then place on a baking sheet. Broil the peppers about 5 inches from the heat for 14 minutes, making sure to turn occasionally, until skin is blistered and browned.
- Remove the peppers and place into a paper bag, close tightly and let stand for 20 minutes.
- Once the peppers are cool enough to handle, remove the skins, stems, seeds and membranes and then serve.
