Roast Venison Loin is a treat for hunters.


  • 3 pounds venison loin
  • 3 tablespoons bacon fat
  • 3 garlic cloves, minced
  • 2 teaspoons black pepper


  1. Pat meat dry. Combine bacon fat, garlic and black pepper, and mix well. Rub mixture over meat. Place on rack and roast for 17 minutes at 450 degrees F. Remove from over and allow to stand 5 minutes before serving.
