Roast Turkey Roll-Ups make a nice first course for two.
- 1/2 cup baby spinach leaves
- 1/2 pound roasted turkey breast, sliced thin
- 2 tablespoons mayonaise
- 2 cups alfalfa sprouts
- 1 teaspoon orange bell pepper, chopped
- 3 chives for garnish
- Place turkey slices on a plate. Spread turkey with mayonaise. Top with spinach leaves and sprouts. Roll up and divide between 2 plates.
- Garnish rolls with pepper bits and chives.
