Roast Pork with Lima Beans

Roast Pork with Lima Beans bake together for a great one dish meal.


  • 4 pounds pork loin
  • 1 pound lima beans, soaked overnight
  • 2 cans tomato soup
  • 2 soup cans warm water
  • 1 teaspoon baking soda
  • salt and pepper to taste


  1. Season roast with salt and pepper; place roast in a shallow baking dish. Bake at 350 degrees F. Meanwhile cook lima beans in water; bring to boil and baking soda; cook 20 minutes. Mix tomato soup and water. Add to drained beans and pour over roast.
  2. Roast all together, about 2 1/2 hours or until meat is tender.
