Roast Chicken with Chili Lime Sauce is seasoned with the spiciness of chili and the classic flavor of herbes de Provence.  A really healthy taste treat.


  • 2 teaspoons herbes de Provence
  • 1/2 teaspoon coarse salt
  • 4 bone in, skin on chicken breast halves
  • 1/3 cup tomato juice
  • 1 tablespoon lime juice
  • 3/4 teaspoon chili powder
  • 1 tablespoon extra virgin olive oil


  1. Heat oven to 425 degrees
  2. Combine salt and herbes and rub mixture on chicken
  3. Roast chicken on a baking sheet for 25 minutes or until done
  4. In a small bowl whisk together tomato juice, lime juice and chili powder and a pinch of salt
  5. Whisk in olive oil
  6. Serve chicken topped with chili sauce mixture
