Roast Chicken with Chili Lime Sauce is seasoned with the spiciness of chili and the classic flavor of herbes de Provence. A really healthy taste treat.
Ingredients
- 2 teaspoons herbes de Provence
- 1/2 teaspoon coarse salt
- 4 bone in, skin on chicken breast halves
- 1/3 cup tomato juice
- 1 tablespoon lime juice
- 3/4 teaspoon chili powder
- 1 tablespoon extra virgin olive oil
Directions
- Heat oven to 425 degrees
- Combine salt and herbes and rub mixture on chicken
- Roast chicken on a baking sheet for 25 minutes or until done
- In a small bowl whisk together tomato juice, lime juice and chili powder and a pinch of salt
- Whisk in olive oil
- Serve chicken topped with chili sauce mixture
