Rhubarb Refresher will perk you up.
- 1 pound rhubarb, cut into 1 inch pieces
- 1/4 cup sugar
- 1/4 cup strawberry jelly
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- In 2 quart saucepan over medium heat, heat all ingredients to boiling. Reduce heat to low; cover and simmer 10 minutes or until rhubarb is tender, stirring occasionally.
- Spoon rhubarb mixture into four dessert dishes. Serve warm or chilled.
