Rhubarb Crunch is tangy and flavorful.
Ingredients
- 1 cup flour
- 3/4 cup oatmeal
- 1/2 cup margarine, melted
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 5 cups rhubarb
- 1 teaspoon vanilla
Directions
- Mix until crumbly; flour, oatmeal, brown sugar and cinnamon. Add margarine and mix. Press 1/2 of mixture into greased baking dish. Cover with rhubarb.
- Combine white sugar, cornstarch and water. Cook until thick and clear, stirring constantly. Remove and add vanilla. Pour over rhubarb and add remaining crumbs. Bake at 350 degrees F for 1 hour.
