Rhubarb Crunch is tangy and flavorful.

Ingredients

  • 1 cup flour
  • 3/4 cup oatmeal
  • 1/2 cup margarine, melted
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 5 cups rhubarb
  • 1 teaspoon vanilla

Directions

  1. Mix until crumbly; flour, oatmeal, brown sugar and cinnamon. Add margarine and mix. Press 1/2 of mixture into greased baking dish. Cover with rhubarb.
  2. Combine white sugar, cornstarch and water. Cook until thick and clear, stirring constantly. Remove and add vanilla. Pour over rhubarb and add remaining crumbs. Bake at 350 degrees F for 1 hour.
