Ingredients

  • 1 1/2 c. sugar
  • 3 tablespoons flour
  • 1/2 teaspoon nutmeg
  • 1 tablespoons butter
  • 2 eggs, beaten well
  • 3 cups cut rhubarb
  • 1 store-bought pastry shell, unbaked

Directions

  1. Blend sugar, flour, nutmeg and butter.
  2. Add eggs; beat until velvety.
  3. Place rhubarb into 9-inch pastry-lined pan.
  4. Pour mixture over rhubarb; top with pastry.
  5. Bake at 450F for 10 minutes then at 350F for 30 minutes.
