Tired of plain ol' rhubarb pie? Try this.
- 1 1/2 c. sugar
- 3 tablespoons flour
- 1/2 teaspoon nutmeg
- 1 tablespoons butter
- 2 eggs, beaten well
- 3 cups cut rhubarb
- 1 store-bought pastry shell, unbaked
- Blend sugar, flour, nutmeg and butter.
- Add eggs; beat until velvety.
- Place rhubarb into 9-inch pastry-lined pan.
- Pour mixture over rhubarb; top with pastry.
- Bake at 450F for 10 minutes then at 350F for 30 minutes.
