Tangy Rhubarb Cake will satisfy any sweet tooth.

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 cups flour
  • 1 teaspoon baking soda
  • 4 cups rhubarb
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon

Directions

  1. Cream together sugar and shortening until fluffy. Add egg and beat.
  2. Add remaining ingredients and mix well. Fold in rhubarb.
  3. Pour batter into a buttered 9 x 13 inch baking pan. Mix cinnamon into the brown sugar. Sprinkle mixture on top of cake.
  4. Bake at 350 degrees F for 35 to 40 minutes.
