Tangy Rhubarb Cake will satisfy any sweet tooth.
Ingredients
- 1 1/2 cups sugar
- 1/2 cup shortening
- 1 egg
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup buttermilk
- 2 cups flour
- 1 teaspoon baking soda
- 4 cups rhubarb
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
Directions
- Cream together sugar and shortening until fluffy. Add egg and beat.
- Add remaining ingredients and mix well. Fold in rhubarb.
- Pour batter into a buttered 9 x 13 inch baking pan. Mix cinnamon into the brown sugar. Sprinkle mixture on top of cake.
- Bake at 350 degrees F for 35 to 40 minutes.
