Refrigerator Carrots can be made ahead and would be a great side dish for a special dinner.
- 2, 15 ounce cans of carrots, drained
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/2 cup vegetable oil
- 1 can tomato soup
- 2 green peppers, cut in rings
- 2 medium onions, cut in rings
- Bring sugar, vinegar, oil and tomato soup to a boil and pour over heated, drained carrots. Add peppers and onions. Cover and refrigerate for 24 hours. Let stand at room temperature before serving.
