Refrigerator Carrots can be made ahead and would be a great side dish for a special dinner.

Ingredients

  • 2, 15 ounce cans of carrots, drained
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup vegetable oil
  • 1 can tomato soup
  • 2 green peppers, cut in rings
  • 2 medium onions, cut in rings

Directions

  1. Bring sugar, vinegar, oil and tomato soup to a boil and pour over heated, drained carrots. Add peppers and onions. Cover and refrigerate for 24 hours. Let stand at room temperature before serving.
