Refrigerator Bran Muffins are better when batter has been mixed at least 24 hours.

Ingredients

  • 1 cup boiling water
  • 2 cups Kellogg's All Bran
  • 1 cup Nabisco 100 % Bran
  • 1 cup raisins
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoons salt

Directions

  1. Pour boiling water over cereal and raisins. In a large bowl blend remaining ingredients. Add Bran mixture. Store mixture in covered jars in refrigerator. Batter will keep for 3 weeks.
  2. Bake in lightly greased muffin tins at 400 degrees F for 15-25 minutes.
