Refrigerator Bran Muffins are better when batter has been mixed at least 24 hours.
Ingredients
- 1 cup boiling water
- 2 cups Kellogg's All Bran
- 1 cup Nabisco 100 % Bran
- 1 cup raisins
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 2 cups buttermilk
- 2 1/2 cups flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoons salt
Directions
- Pour boiling water over cereal and raisins. In a large bowl blend remaining ingredients. Add Bran mixture. Store mixture in covered jars in refrigerator. Batter will keep for 3 weeks.
- Bake in lightly greased muffin tins at 400 degrees F for 15-25 minutes.
