Red Beans Mexican Style

You can add ground turkey or beef to this dish for a different flavor.

Ingredients

  • 1 1/2 pounds dry beans
  • 6 cups cold water
  • 1 onion, chopped
  • 2 cans tomatoes
  • 3 cloves fresh garlic, minced
  • 3 tsp. chili powder
  • 2 1/2 tsp. salt
  • 3 tsp. ground cumin
  • 1 teaspoon black pepper

Directions

  1. Place beans in a bowl and fill with water.
  2. Soak overnight.
  3. Drain beans.
  4. Place beans in a crock pot.
  5. Pour tomatoes over beans.
  6. Add all other ingredients.
  7. Stir gently until will mixed.
  8. Cover and cook on high for about 2 hours.
  9. Reduce heat to low and cook for an additonal 8 hours.
