- 1 (15-ounce) can dark red kidney beans, rinsed
- Zest and juice of a lemon
- 1 small garlic clove, chopped
- 2 tablespoons coarsely chopped parsley
- 1 heaping tablespoon tahini or creamy peanut butter
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- Place all ingredients in a food processor or blender and puree.
