Ingredients
- 1/2 cup plain yogurt
- 3 tablespoons vegetable oil
- 1 tablespoon lemon juice
- 2 egg whites
- 1/2 teaspoon lemon extract
- 1-1/2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon lemon peel, grated
- 1 cup frozen raspberries
Directions
- Mix together yogurt, vegetable oil, lemon juice, egg whites and lemon extract.
- In a separate bowl, combine flour, sugar, baking powder, salt and lemon peel.
- Blend flour combination into sugar mixture.
- Fold in raspberries.
- Pour batter into a greased muffin tin.
- Bake at 400 degrees for 15-17 minutes.
