Ingredients

  • 1/2 cup plain yogurt
  • 3 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 2 egg whites
  • 1/2 teaspoon lemon extract
  • 1-1/2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon peel
  • 1 cup raspberries

Directions

  1. Mix together yogurt, vegetable oil, lemon juice, egg whites and lemon extract.
  2. In a separate bowl, combine flour, sugar, baking powder, salt and grated lemon peel.
  3. Blend flour combination into yogurt mixture.
  4. Fold in raspberries.
  5. Pour batter into a greased loaf pan.
  6. Bake at 400 degrees for 45-50 minutes.
