This sweet cake serves well as an after-breakfast treat, especially alongside a hot cup of coffee.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup raspberries
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Directions

  1. Beat egg, 1/2 cup butter and 1/2 cup sugar; stir in sour cream, milk and vanilla.
  2. In a separate bowl, combine 2 cups flour, baking powder, baking soda, 1 tablespoon cinnamon and salt.
  3. Blend flour combination into egg mixture.
  4. Fold in raspberries.
  5. Pour batter into a greased 8x8 baking dish.
  6. In a small bowl, mix together remaining sugar, flour, butter and cinnamon until mixture becomes crumbly; sprinkle over top of cake batter.
  7. Bake at 400 degrees for 20-25 minutes.
