This sweet cake serves well as an after-breakfast treat, especially alongside a hot cup of coffee.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon vanilla
- 2 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/4 teaspoon salt
- 1 cup raspberries
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Directions
- Beat egg, 1/2 cup butter and 1/2 cup sugar; stir in sour cream, milk and vanilla.
- In a separate bowl, combine 2 cups flour, baking powder, baking soda, 1 tablespoon cinnamon and salt.
- Blend flour combination into egg mixture.
- Fold in raspberries.
- Pour batter into a greased 8x8 baking dish.
- In a small bowl, mix together remaining sugar, flour, butter and cinnamon until mixture becomes crumbly; sprinkle over top of cake batter.
- Bake at 400 degrees for 20-25 minutes.
