Cream cheese on a slice of warm, homemade Raisin Bread is breakfast heaven!

Ingredients

  • 3 tablespoons butter
  • 1 cup sugar
  • 3 eggs
  • 3/4 cup raisins
  • 1 tablespoons grated lemon rind
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon mace
  • 1/2 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 1 cup milk

Directions

  1. Cream butter and sugar. Add eggs one at a time, beating well after each addition. Stir in raisins and lemon rind. Mix and sift dry ingredients. Combine lemon and vanilla extracts and milk alternatively with dry ingredients. Add to raisin mixture.
  2. Pour into greased and floured loaf pan. Bake at 350 degrees F for 45-50 minutes.
