Easy to make Raisin Bran Cereal Muffins taste great any time.  The batter may be stored in the refrigerator, tightly sealed, for up to 6 weeks.

Ingredients

  • 1, 15 ounce package Raisin Bran cereal
  • 1/2 cup margarine, softened
  • 3 cups sugar
  • 4 eggs, beaten
  • 1 quart buttermilk
  • 5 teaspoons baking soda
  • 3 teaspoons salt
  • 5 cups flour

Directions

  1. Cream together margarine and sugar; add eggs. Mix well. Sift flour, salt and baking soda together. Add alternately with buttermilk and bran cereal. Mix well.
  2. Fill greased muffin cups 2/3's full. Bake at 400 degrees F for 15 to 20 minutes.
