The slightly nutty taste and fluffy texture of quinoa is complimented by the crunch of radishes, the freshness of basil and the brightness of lemon in this wonderful salad.
- 1/2 cup quinoa, well rinsed
- 1-1/2 cups baby greens
- 1/2 cup sliced French breakfast radishes
- 2 tablespoons basil, chiffonade
- 1 teaspoon lemon zest
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon sea salt
- Cook the quinoa according to package directions and then place into a large bowl once cool.
- Add the greens, radishes, basil, lemon zest, lemon juice and sea salt to the bowl, and toss well to combine. Serve immediately.
