A quince is a pear-shaped fruit that is frequently used for preserves or flavoring. Quinces cannot be eaten raw, but need to be cooked first in order to eliminate their acidity.


  • 6 quinces, wiped clean
  • 2 liters inexpensive brandy
  • 4 small cinnamon sticks
  • 2 vanilla beans
  • 4 star anise
  • 1-gallon jar


  1. Using a sharp knife, quarter the quinces and then place into the jar. Pour the brandy into the jar and then add the cinnamon sticks, star anise and vanilla bean.
  2. Close the lid of the jar securely and then place the mixture into a cool, dry area for at least 6 weeks to steep.
  3. Strain the mixture through a fine mesh sieve and into glasses to serve.
