A quince is a pear-shaped fruit that is frequently used for preserves or flavoring. Quinces cannot be eaten raw, but need to be cooked first in order to eliminate their acidity.
Ingredients
- 6 quinces, wiped clean
- 2 liters inexpensive brandy
- 4 small cinnamon sticks
- 2 vanilla beans
- 4 star anise
- 1-gallon jar
Directions
- Using a sharp knife, quarter the quinces and then place into the jar. Pour the brandy into the jar and then add the cinnamon sticks, star anise and vanilla bean.
- Close the lid of the jar securely and then place the mixture into a cool, dry area for at least 6 weeks to steep.
- Strain the mixture through a fine mesh sieve and into glasses to serve.
