Ingredients

  • Bars:
  • 1 cup oil
  • 4 eggs
  • 2 cups sugar
  • 2 cups canned pumpkin
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 cups flour
  • Frosting:
  • 3 ounces cream cheese, softened
  • 6 tablespoons margarine, softened
  • 1 teaspoon milk
  • 1 teaspoon vanilla
  • 2 cups confectioners' sugar

Directions

  1. Beat oil, eggs and sugar until smooth.
  2. Add remaining bar ingredients and mix well.
  3. Pour into ungreased 15" x 10" jelly roll pan. Bake 20 to 25 minutes at 350F.
  4. Cool completely and frost. Store covered in refrigerator.
  5. To prepare frosting: Beat all frosting ingredients until creamy.
