Made with buttermilk and cut into rounds with a biscuit cutter,  Quick Rolls are light and tender.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon soda
  • 1/3 cup shortening
  • 1 package yeast
  • 3/4 cup buttermilk
  • melted butter

Directions

  1. Sift dry ingredients together into a bowl. Cut in shortening until crumbly.
  2. Dissolve yeast in 1/4 cup warm water. Add buttermilk. Stir into dry ingredients, mixing well. Knead lightly on a floured surface.
  3. Roll to 1/4-inch thickness and cut with biscuit cutter. Dip in butter. Fold in half and place on greased cookie sheet. Let rise for 1 hour.
  4. Bake at 425 degrees F for 12 minutes.
