Use leftover mashed potatoes for Quick Potato Cheese Bake.
- 4 cups mashed potatoes
- 2 eggs, slightly beaten
- 1/2 cup Cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated
- salt and pepper to taste
- Combine potatoes, Parmesan cheese and eggs in a greased casserole dish. Season with salt and pepper to taste. Top with Cheddar cheese and bake at 350 degrees F for 25 minutes.
