A simple and delightful peanut brittle, the perfect holiday treat.
Ingredients
- 2 cups sugar
- 1/2 cup light corn syrup
- 2 cups dry-roasted peanuts
- 1 tablespoon butter
- 1 teaspoon baking soda
Directions
- Mix together the sugar and corn syrup in a saucepan. Cook, stirring constantly, over low heat until the sugar has dissolved. Cover and cook on medium for an additional 2 minutes.
- Mix in the peanuts and continue to cook, stirring occasionally, until the mixture has reached the hard-crack stage (300 degrees Fahrenheit on a candy thermometer).
- Add in the baking soda and butter. Thinly spread the mixture into a greased jelly roll pan. Allow to cool before breaking into serving size pieces.
