Quick Peanut Brittle

A simple and delightful peanut brittle, the perfect holiday treat.


  • 2 cups sugar
  • 1/2 cup light corn syrup
  • 2 cups dry-roasted peanuts
  • 1 tablespoon butter
  • 1 teaspoon baking soda


  1. Mix together the sugar and corn syrup in a saucepan. Cook, stirring constantly, over low heat until the sugar has dissolved. Cover and cook on medium for an additional 2 minutes.
  2. Mix in the peanuts and continue to cook, stirring occasionally, until the mixture has reached the hard-crack stage (300 degrees Fahrenheit on a candy thermometer).
  3. Add in the baking soda and butter. Thinly spread the mixture into a greased jelly roll pan. Allow to cool before breaking into serving size pieces.
