Quick Mexican Rice

A simple and delicious Mexican style rice side dish.


  • 1 cup uncooked Minute Rice
  • 1 green pepper, chopped
  • 1/2 medium onion, chopped
  • 1 (28 ounce) can tomatoes


  1. Fry 3 tablespoons of rice until browned. Mix in the onions and green pepper and saute. Stir in the remaining rice along with the tomatoes. Cover and simmer for 30 minutes.
