Quick enchilada casserole.

Ingredients

  • 2 (15 ounce) cans hominy, drained
  • 1 cup chopped onion
  • 2 cups grated cheddar cheese
  • 1 (15 ounce) can chili or enchilada sauce

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Arrange the hominy and onions in the bottom of a casserole dish.
  2. Sprinkle 1/2 of the cheese on top. Pour the chili over and top with the remaining cheese. Bake for 45 minutes.
