Quick enchilada casserole.
- 2 (15 ounce) cans hominy, drained
- 1 cup chopped onion
- 2 cups grated cheddar cheese
- 1 (15 ounce) can chili or enchilada sauce
- Preheat the oven to 350 degrees Fahrenheit. Arrange the hominy and onions in the bottom of a casserole dish.
- Sprinkle 1/2 of the cheese on top. Pour the chili over and top with the remaining cheese. Bake for 45 minutes.
