A quick vegetarian meal that you can have on the table in a matter of a few minutes. 


  • 15 ounce can black beans rinsed and drained
  • 2-3 cloves minced garlic
  • 1 teaspoon oregano
  • 1 teaspoon sea salt
  • 1 teaspoon crushed red pepper
  • 1 bay leaf
  • 2-3 cups vegetable broth


  1. Place all ingredients in a medium size saucepan
  2. Simmer until beans are tender
  3. Drain and serve with salsa

I am always looking for new ways to get protein in my diet. I think this would be a great healthy snack with a hand full of chips.
