Queen's Raspberry Buns are perfect for high tea.
Ingredients
- 3 cups flour, sifted
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup vegetable shortening
- 1 egg, well beaten
- 1/2 cup milk
- 1, 8 ounce jar raspberry jam
- 2 tablespoons milk
- 1 tablespoon sugar
Directions
- Sift the flour with baking powder, salt and sugar. Cut shortening into the flour. Add beaten egg with milk.
- Turn batter out onto a floured surface and knead until smooth. Cut dough into 18 pieces. Roll each in palm until well rounded--about 3 inches in diameter.
- Place 1/2 teaspoon of jam in center and bring edges up firmly and roll into ball.
- Place on greased baking sheet. Make a cross on top of each bun and brush tops with milk. Sprinkle with sugar. Bake at 375 degrees F for 25 minutes or until golden brown.
