Queen's Raspberry Buns are perfect for high tea. 

Ingredients

  • 3 cups flour, sifted
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup vegetable shortening
  • 1 egg, well beaten
  • 1/2 cup milk
  • 1, 8 ounce jar raspberry jam
  • 2 tablespoons milk
  • 1 tablespoon sugar

Directions

  1. Sift the flour with baking powder, salt and sugar. Cut shortening into the flour. Add beaten egg with milk.
  2. Turn batter out onto a floured surface and knead until smooth. Cut dough into 18 pieces. Roll each in palm until well rounded--about 3 inches in diameter.
  3. Place 1/2 teaspoon of jam in center and bring edges up firmly and roll into ball.
  4. Place on greased baking sheet. Make a cross on top of each bun and brush tops with milk. Sprinkle with sugar. Bake at 375 degrees F for 25 minutes or until golden brown.
