Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup canned pumpkin
  • 1 cup butter, melted
  • 1 tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup grated zucchini
  • 1 cup chopped nuts

Directions

  1. Cream eggs, sugar, pumpkin, butter and vanilla.
  2. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
  3. Blend flour combination into pumpkin mixture.
  4. Fold in zucchini and nuts.
  5. Pour batter into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.

Great recipe! I used 1 c unbleached+1 c whole wheat flour. It was just wonderful, moist but not wet, a slight crisp on the exterior. Definitely would make this again.
