Pumpkin Walnut Cookies are great for harvest celebrations.  Frost with vanilla buttercream and make a face with candy corn and walnut pieces.

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla
  • 1 teaspoon grated lemon peel
  • 1 teaspoon lemon juice
  • 2 1/2 cups flour, sifted
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoons ginger
  • 1 cup walnuts, coarsely chopped

Directions

  1. Cream butter and sugar together until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, lemon peel and juice. Resift flour with baking powder, salt and spice; blend into butter mixture. Stir in walnuts.
  2. Drop by tablespoonfuls onto greased baking sheets 2 inches apart. Bake at 375 degrees F 12 to 14 minutes.
