Pumpkin Walnut Cookies are great for harvest celebrations. Frost with vanilla buttercream and make a face with candy corn and walnut pieces.
Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups brown sugar
- 2 large eggs
- 1 cup canned pumpkin
- 1 teaspoon vanilla
- 1 teaspoon grated lemon peel
- 1 teaspoon lemon juice
- 2 1/2 cups flour, sifted
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoons ginger
- 1 cup walnuts, coarsely chopped
Directions
- Cream butter and sugar together until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, lemon peel and juice. Resift flour with baking powder, salt and spice; blend into butter mixture. Stir in walnuts.
- Drop by tablespoonfuls onto greased baking sheets 2 inches apart. Bake at 375 degrees F 12 to 14 minutes.
