Ingredients

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1-1/2 teaspoons cinnamon
  • 3 tablespoons butter
  • 1/2 cup chopped nuts
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1-1/2 cups canned pumpkin
  • 1 teaspoon vanilla

Directions

  1. Mix together 1/2 cup flour, 1/4 cup brown sugar, 1-1/2 teaspoons cinnamon and 3 tablespoons butter until mixture becomes crumbly; set aside.
  2. Combine 2 cups flour, baking powder, cinnamon, baking soda and salt.
  3. In a separate bowl, cream 1 cup butter, sugar, eggs, pumpkin and vanilla.
  4. Blend flour combination into egg mixture.
  5. Pour half of the cake batter into a greased 8x8 baking dish, then sprinkle 3/4 cup of streusel topping over batter.
  6. Pour remaining batter over top of streusel layer, then top with remaining streusel crumb mixture.
  7. Bake at 350 degrees for 1 hour.
