Impress your friends with this spiced coffeecake at your next breakfast gathering.
Ingredients
- 1/2 cup flour
- 1/4 cup brown sugar
- 1-1/2 teaspoons cinnamon
- 3 tablespoons butter
- 1/2 cup chopped nuts
- 2 cups flour
- 2 teaspoons baking powder
- 1-1/2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1-1/2 cups canned pumpkin
- 1 teaspoon vanilla
Directions
- Mix together 1/2 cup flour, 1/4 cup brown sugar, 1-1/2 teaspoons cinnamon and 3 tablespoons butter until mixture becomes crumbly; set aside.
- Combine 2 cups flour, baking powder, cinnamon, baking soda and salt.
- In a separate bowl, cream 1 cup butter, sugar, eggs, pumpkin and vanilla.
- Blend flour combination into egg mixture.
- Pour half of the cake batter into a greased 8x8 baking dish, then sprinkle 3/4 cup of streusel topping over batter.
- Pour remaining batter over top of streusel layer, then top with remaining streusel crumb mixture.
- Bake at 350 degrees for 1 hour.
