This spiced cake is ideal for taking to potlucks, or cut into bars and freeze for a grab-and-go breakfast treat. Top with a cream cheese frosting for additional flavor.
Ingredients
- 1-1/2 cups sugar
- 1-1/2 cups canned pumpkin
- 1 cup vegetable oil
- 4 eggs
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Directions
- Mix together sugar, pumpkin, oil and eggs.
- Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg.
- Blend pumpkin mixture into flour combination; mix thoroughly.
- Pour batter into a greased 9x13 baking dish.
- Bake at 350 degrees for 25-30 minutes.
