This spiced cake is ideal for taking to potlucks, or cut into bars and freeze for a grab-and-go breakfast treat. Top with a cream cheese frosting for additional flavor.

Ingredients

  • 1-1/2 cups sugar
  • 1-1/2 cups canned pumpkin
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Mix together sugar, pumpkin, oil and eggs.
  2. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg.
  3. Blend pumpkin mixture into flour combination; mix thoroughly.
  4. Pour batter into a greased 9x13 baking dish.
  5. Bake at 350 degrees for 25-30 minutes.
