This spiced coffee cake makes a cozy afternoon snack, especially alongside a hot cup of coffee.

Ingredients

  • 1 cup raisins
  • 1/2 cup hot water
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/4 cup sugar
  • 1 cup powdered milk
  • 1 teaspoon nutmeg
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup applesauce
  • 1-3/4 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

Directions

  1. In a bowl, soak raisins in hot water for 5 minutes; do not drain.
  2. Cream eggs, pumpkin, 1/4 cup sugar, nutmeg, 1 tablespoon cinnamon, applesauce and salt.
  3. In a separate bowl, combine 1-3/4 cups flour, baking powder, baking soda and powdered milk.
  4. Blend flour combination into pumpkin mixture.
  5. Fold in raisin-water mixture.
  6. Pour batter into a greased 8x8 baking dish.
  7. Mix together remaining flour, sugar, cinnamon and butter until mixture becomes coarse; sprinkle over top of cake batter.
  8. Bake at 400 degrees for 25-30 minutes.
