Ingredients

  • 1/2 cup canned pumpkin
  • 1 cup self-rising flour
  • 2 tablespoons brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp ginger
  • 3/4 cup milk
  • 1/4 tsp pure vanilla extract
  • 2 tablespoons vegetable oil
  • 1 egg, beaten

Directions

  1. Heat a large frying pan over medium heat coated with nonstick cooking spray.
  2. Mix together the dry ingredients and then add the remaining ingredients and mix thoroughly. Pour approximately 1/4 cup of batter for each pancake. Cook until the edges are just dry. Turn pancakes and cook until lightly browned. Enjoy with butter and maple syrup!
