Here's a pumpkin recipe for all you pancake lovers out there. Try pumpkin pancakes for breakfast today!
Ingredients
- 1/2 cup canned pumpkin
- 1 cup self-rising flour
- 2 tablespoons brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ginger
- 3/4 cup milk
- 1/4 tsp pure vanilla extract
- 2 tablespoons vegetable oil
- 1 egg, beaten
Directions
- Heat a large frying pan over medium heat coated with nonstick cooking spray.
- Mix together the dry ingredients and then add the remaining ingredients and mix thoroughly. Pour approximately 1/4 cup of batter for each pancake. Cook until the edges are just dry. Turn pancakes and cook until lightly browned. Enjoy with butter and maple syrup!
