This spiced bread makes a cozy afternoon snack on those cold Fall afternoons. Consider baking a loaf to share with friends and neighbors during the holiday season.
Ingredients
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 2/3 cup water
- 1-1/2 cups canned pumpkin
- 2 teaspoons ginger
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3-1/2 cups flour
- 2 teaspoons baking soda
- 1-1/2 teaspoons salt
- 1/2 teaspoon baking powder
Directions
- Cream sugar, vegetable oil and eggs; stir in water.
- Mix in pumpkin, ginger, cinnamon and nutmeg; mix well.
- In a separate bowl, combine flour, baking soda, salt and baking powder.
- Blend flour combination into pumpkin mixture.
- Pour batter into greased loaf pans.
- Bake at 350 degrees for 1 hour.
