Ingredients

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 1-1/2 cups canned pumpkin
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3-1/2 cups flour
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon baking powder

Directions

  1. Cream sugar, vegetable oil and eggs; stir in water.
  2. Mix in pumpkin, ginger, cinnamon and nutmeg; mix well.
  3. In a separate bowl, combine flour, baking soda, salt and baking powder.
  4. Blend flour combination into pumpkin mixture.
  5. Pour batter into greased loaf pans.
  6. Bake at 350 degrees for 1 hour.
