Ingredients

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin
  • 2 cups cranberries, coarsely chopped
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1/4 cup molasses
  • 1 egg

Directions

  1. Mix pumpkin, cranberries, vegetable oil, milk, molasses and egg; blend well.
  2. In a separate bowl, combine flour, brown sugar, baking soda, cinnamon, nutmeg and salt.
  3. Blend flour combination into pumpkin mixture.
  4. Pour batter into a greased muffin tin.
  5. Bake at 350 degrees for 25-30 minutes.
