This spiced coffee cake makes an excellent breakfast treat, especially alongside a hot cup of coffee.

Ingredients

  • 2-1/4 cups flour
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 1 cup powdered milk
  • 1 cup canned pumpkin
  • 1/2 cup applesauce
  • 1 cup cranberries
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Directions

  1. Combine 2-1/4 cups flour, baking soda, 1 tablespoon cinnamon, nutmeg and powdered milk.
  2. In a separate bowl, beat eggs, 1 cup sugar, pumpkin and applesauce.
  3. Blend flour combination into applesauce mixture.
  4. Fold in cranberries.
  5. Pour batter into a greased 8x8 baking dish.
  6. Mix together remaining sugar, flour, cinnamon and butter until mixture becomes crumbly; sprinkle over top of cake batter.
  7. Bake at 400 degrees for 20-25 minutes.
