Ingredients

  • 2 eggs
  • 1 cup sugar
  • 3/4 cup vegetable oil
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 package coconut cream instant pudding mix
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup canned pumpkin
  • 1/2 cup chopped nuts

Directions

  1. Cream eggs, sugar and vegetable oil; mix well.
  2. Combine flour, baking powder, baking soda, salt, pudding, nutmeg and cinnamon.
  3. Blend flour combination and pumpkin into egg mixture.
  4. Fold in chopped nuts.
  5. Pour batter into a greased loaf pan.
  6. Bake at 350 degrees for 1 hour.
