This spiced bread makes a cozy afternoon snack, especially alongside a hot cup of coffee. Ideal for gift-giving during the holiday season, as well.
Ingredients
- 4 cups flour
- 4 teaspoons baking powder
- 4 teaspoons cinnamon
- 2 teaspoons ginger
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1-1/2 cups canned pumpkin
- 4 eggs
- 1 cup sugar
- 1 cup brown sugar
- 1 cup mashed bananas
- 3/4 cup vegetable oil
- 1 cup chopped walnuts
Directions
- Combine flour, baking powder, cinnamon, ginger, baking soda and salt; set aside.
- Mix together pumpkin, eggs, sugar, brown sugar, bananas and vegetable oil; blend well.
- Blend flour combination into pumpkin mixture.
- Fold in chopped walnuts.
- Pour batter into two greased loaf pans.
- Bake at 350 degrees for 1 hour.
