This interesting combination makes a delicious breakfast muffin! Ideal for serving on cold, October mornings or even on Thanksgiving.

Ingredients

  • 2-1/2 cups flour
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 2 cups apple, peeled and chopped
  • 2 tablespoons flour
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 4 teaspoons butter

Directions

  1. Combine 2-1/2 cups flour, 2 cups sugar, 1 teaspoon cinnamon, nutmeg, baking soda and salt; set aside.
  2. Beat eggs, pumpkin and vegetable oil.
  3. Blend flour combination into pumpkin mixture.
  4. Fold in chopped apples.
  5. Pour batter into greased muffin tins.
  6. Mix together remaining flour, sugar, cinnamon and butter until mixture becomes coarse; sprinkle over tops of muffins.
  7. Bake at 350 degrees for 35-40 minutes.
