This interesting combination makes a delicious breakfast muffin! Ideal for serving on cold, October mornings or even on Thanksgiving.
Ingredients
- 2-1/2 cups flour
- 2 cups sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 2 cups apple, peeled and chopped
- 2 tablespoons flour
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 4 teaspoons butter
Directions
- Combine 2-1/2 cups flour, 2 cups sugar, 1 teaspoon cinnamon, nutmeg, baking soda and salt; set aside.
- Beat eggs, pumpkin and vegetable oil.
- Blend flour combination into pumpkin mixture.
- Fold in chopped apples.
- Pour batter into greased muffin tins.
- Mix together remaining flour, sugar, cinnamon and butter until mixture becomes coarse; sprinkle over tops of muffins.
- Bake at 350 degrees for 35-40 minutes.
