This spiced coffee cake is sure to hit the spot on a cold, crisp afternoon in late October.
Ingredients
- 2-1/2 cups flour
- 1 cup sugar
- 1 cup powdered milk
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup applesauce
- 2 cups apple, peeled and chopped
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Directions
- Combine 2-1/2 cups flour, 1 cup sugar, 1 tablespoon cinnamon, powdered milk, baking soda and salt; set aside.
- Cream eggs, pumpkin and applesauce.
- Blend flour combination into applesauce mixture.
- Fold in apples.
- Pour batter into a greased 8x8 baking dish.
- Mix together remaining sugar, flour, cinnamon and butter until mixture becomes crumbly; sprinkle over top of cake batter.
- Bake at 350 degrees for 30-35 minutes.
