Prune Pudding Cake is topped with a buttery glaze.

Ingredients

  • Cake: 3 eggs
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup cooked prunes
  • 1/2 cup pecans, chopped
  • Topping: 1/4 pound butter
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1 tablespoon light corn syrup

Directions

  1. Combine cake ingredients and mix well. Pour into a greased 9 by 13 inch baking pan. Bake at 300 degrees F for 1 hour.
  2. Combine topping ingredients in a saucepan and cook over medium heat for 3 minutes. Puncture cake, while still warm, and pour topping evenly over cake. Let set at least 30 minutes before cutting.
