Made with white wine, Prune Chicken Saute has a sweet and savory flavor.

Ingredients

  • 1 clove of garlic
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1, 3 pound broiler-fryer, cut up
  • salt and pepper to taste
  • 1/2 onion, thinly sliced
  • 1/4 cup celery, chopped
  • 1/4 teaspoon tarragon, crushed
  • 1/2 cup prunes
  • 1 cup dry white wine

Directions

  1. Saute garlic in butter and oil in skillet until golden. Remove garlic and discard. Season chicken with salt and pepper. Brown chicken in oil.
  2. Sprinkle remaining ingredients except wine over chicken. Pour wine over all. Cook, uncovered, for 45 minutes to 1 hour.
