Made with white wine, Prune Chicken Saute has a sweet and savory flavor.
Ingredients
- 1 clove of garlic
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1, 3 pound broiler-fryer, cut up
- salt and pepper to taste
- 1/2 onion, thinly sliced
- 1/4 cup celery, chopped
- 1/4 teaspoon tarragon, crushed
- 1/2 cup prunes
- 1 cup dry white wine
Directions
- Saute garlic in butter and oil in skillet until golden. Remove garlic and discard. Season chicken with salt and pepper. Brown chicken in oil.
- Sprinkle remaining ingredients except wine over chicken. Pour wine over all. Cook, uncovered, for 45 minutes to 1 hour.
