Prune Cake is made with 2 jars of prune baby food.
Ingredients
- 1 cup vegetable oil
- 1 1/2 cups sugar
- 3 eggs
- 2 cups flour
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 2 jars prune baby food
- 1/2 cup pecans, chopped
- 1 teaspoon vanilla
- Glazed Topping: 1 cup sugar
- 1/4 cup buttermilk
- 1/2 cup butter
- 1 teaspoon vanilla
- 1 teaspoon white Karo syrup
Directions
- Blend together oil and sugar. Add eggs. Sift together flour, spices, baking soda and salt. Add dry ingredients alternately with 1/2 cup buttermilk. Add prunes. Fold in nuts and stir in vanilla.
- Pour batter into a greased tube pan and bake at 300 degrees F for 1 hour.
- Glazed Topping: Combine all ingredients in a saucepan and melt gradually over low heat. Boil 3 minutes. Pour over warm cake after removing from tube pan.
