Prune Cake is made with 2 jars of prune baby food.

Ingredients

  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 cups flour
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 2 jars prune baby food
  • 1/2 cup pecans, chopped
  • 1 teaspoon vanilla
  • Glazed Topping: 1 cup sugar
  • 1/4 cup buttermilk
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 teaspoon white Karo syrup

Directions

  1. Blend together oil and sugar. Add eggs. Sift together flour, spices, baking soda and salt. Add dry ingredients alternately with 1/2 cup buttermilk. Add prunes. Fold in nuts and stir in vanilla.
  2. Pour batter into a greased tube pan and bake at 300 degrees F for 1 hour.
  3. Glazed Topping: Combine all ingredients in a saucepan and melt gradually over low heat. Boil 3 minutes. Pour over warm cake after removing from tube pan.
