This appetizer looks as impressive as is it tastes. The salty Prosciutto compliments the sweet and bold flavor of the port-marinated figs, and the creamy and sharp tang of the Gorgonzola. Serve with a bottle of Italian Pinot Grigio.

Ingredients

  • 12 figs, halved
  • 2 tablespoons honey
  • 2 tablespoons port
  • 12 slices of prosciutto
  • 3 ounces Gorgonzola cheese
  • salt and freshly ground black pepper
  • 1 bunch of watercress
  • 12 walnut halves

Directions

  1. Heat the honey in a small bowl for about 7 seconds in the microwave.
  2. Add the port, salt and pepper to the bowl and whisk together until well-blended. Empty the marinade into a dish and place the figs, cut side down, into the port marinade. Set aside for 2 hours to marinate at room temperature.
  3. Put a 2 slices of the prosciutto on a plate, a few pieces of watercress, a sprinkle of walnuts and 2 fig halves, cut side up. Sprinkle with some of the cheese and then drizzle with some of the port marinade.
