Preserved lemons are lemons that have been pickled in salt and their own juices. They have a wonderful citrusy, lemony and salty taste.
- 4 tablespoons white wine vinegar
- 2 teaspoon Dijon mustard
- 1 teaspoon freshly ground pepper
- 1 preserved lemon, minced
- 2/3 cup olive oil
- Place the vinegar, mustard, pepper, and preserved lemon into a bowl and whisk vigorously until thoroughly blended. Slowly add the olive oil in a steady steam and continue to whisk until emulsified. Serve immediately.
