Preserved lemons are lemons that have been pickled in salt and their own juices. They have a wonderful citrusy, lemony and salty taste.


  • 4 tablespoons white wine vinegar
  • 2 teaspoon Dijon mustard
  • 1 teaspoon freshly ground pepper
  • 1 preserved lemon, minced
  • 2/3 cup olive oil


  1. Place the vinegar, mustard, pepper, and preserved lemon into a bowl and whisk vigorously until thoroughly blended. Slowly add the olive oil in a steady steam and continue to whisk until emulsified. Serve immediately.
