Potatoes Louisa are baked and can be prepared ahead making this a great side dish for guests.

Ingredients

  • 12 large potatoes, baked
  • 2 cups sour cream
  • 1/3 cup chives, chopped
  • salt and pepper to taste
  • 1, 8 ounce package Cheddar Cheese, shredded
  • 1 1/2 cups milk
  • 1/4 cup butter

Directions

  1. Bake potatoes and cool. Cut in half and scrape into large bowl. Do not mash. Mix in all ingredients using half the cheese. Toss lightly with a fork. Put mixture into a 3 quart casserole. Dot with butter and sprinkle with remaining cheese.
  2. Bake at 375 degrees F for 40 minutes. May be mixed ahead.
