Serve classic Potato Pancakes with sour cream or applesauce.

Ingredients

  • 4 medium potatoes
  • 1 medium onion, chopped fine
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1/2 teaspoon baking soda
  • 2 tablespoons flour
  • vegetable oil for frying

Directions

  1. Peel potatoes and let stand in cold water for 1-2 hours. Shred finely using a food processor. Strain water from potatoes. Add onions, egg, seasonings, flour and soda, mix well.
  2. Heat oil in large skillet, add heaping spoonfuls for each pancake; cook gently until golden brown. Turn and brown other side. Add more oil as needed.
