Serve classic Potato Pancakes with sour cream or applesauce.
Ingredients
- 4 medium potatoes
- 1 medium onion, chopped fine
- 1 egg
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon pepper
- 1/2 teaspoon baking soda
- 2 tablespoons flour
- vegetable oil for frying
Directions
- Peel potatoes and let stand in cold water for 1-2 hours. Shred finely using a food processor. Strain water from potatoes. Add onions, egg, seasonings, flour and soda, mix well.
- Heat oil in large skillet, add heaping spoonfuls for each pancake; cook gently until golden brown. Turn and brown other side. Add more oil as needed.
