Potato Croquettes are baked and flavored with Cheddar cheese.
Ingredients
- 4 cups hot mashed potatoes
- 2 egg yolks
- salt and pepper to taste
- 1 egg, beaten
- cornflakes, crushed
- Cheddar cheese, softened and cut into cubes
Directions
- Combine first 3 ingredients in bowl, mixing well. Shape around small ball of cheese. Dip in mixture of egg and 2 tablespoons water in bowl. Roll in cornflakes crumbs. Place in buttered casserole. Bake at 350 degrees F until brown.
