Potato and onion pancakes.


  • 3 pounds potatoes, grated
  • 4 egg whites, beaten
  • 1 large onion, diced
  • 1/4 cup flour
  • 1 tablespoon low-sodium soy sauce
  • Vegetable cooking spray


  1. Mix together the potatoes, egg whites and onion. Stir in the flour and soy sauce.
  2. Coat a skillet with the cooking spray.
  3. Drop spoonfuls of the potato mixture into the heated skillet, flatten. Heat until brown and crispy on both sides over high heat.
